If you can't find peppermint ice cream, it's really fun to make (page 200, New Southern Basics), or try the pie with classic vanilla bean ice cream - one of my favorites!
Sarah's Fudge Pie
Sarah is my mamma's name. She calls this her "emergency dessert" because she can make it up so quick. I just call it heaven.
serves 6- 8
1/2 cup butter
2 1/2 squares unsweetened chocolate
2 eggs
1 cup sugar
1/4 cup all-purpose flour
Preheat oven to 350. Grease a 9 inch pie pan. Melt the butter with the chocolate in the top of a double boiler. Let cool slightly. Beat the eggs with the sugar and flour, and mix into the chocolate.
Pour into the prepared pie pan and bake for 30 minutes. Divine with peppermint ice cream. (Pretty for Valentine's!)
